Fudgy Date Bites


Medjool dates. High in fiber, low in calories, and yes, they look like... nevermind. The point is they are delicious and they make a great fudgy glue for cocoa, oats, and ground up walnuts. I told my kid these fudgy date bites were brownies, and I can't keep her grubby little paws out of them!

Fudgy Date Bites
8 pitted Medjool dates
1 1/2 c walnuts
1 c oats
1/2 c cocoa
1 TB cinnamon
2 TB agave

Soak dates three hours in purified water. If your dates have pits, make sure you remove them before putting them into the blender.
Blend walnuts in food processor or blender to a moist semicoarse meal, about 1 minute. Add all other ingredients and blend until moist dough forms. Scoop into balls and store in fridge.
