Perfect Lemon Cookies

What else can I say? Definitely not anything about these being diet food. But perfect in every other way. Like a lightly lemon-flavored sugar cookie. Thick. Chewy. LUSCIOUS.

Perfect Lemon Cookies
adapted from
1 3/4 c flour
pinch of salt
1/2 c Earth Balance (vegan butter)
zest of 2 lemons
1/2 c sugar
1/4 c agave
1 tsp baking soda
2 TB fresh lemon juice

Preheat oven to 350 degrees.
Cream butter, lemon zest, sugar, and agave. Add baking soda, flour, salt, and lemon juice. Mix just until combined. Scoop into 1" balls. Bake 7-9 minutes (no need to spray pan).
